Marinara From Scratch and a Friend

As I've mentioned before in the last month or so, things have been crazy for me.

My life has changed yet again. A temporary but drastic change has come over my household and although we're all doing well, this change comes with it's intense challenges.

On top of which, we've had family in town, we've made trips to see family, I'm training for my half marathon in the beginning of September (I'm up to 9 miles), we've celebrated both of our girls' birthdays (4 and 2) and I'm doing my best to enjoy the long days of summer and the incredible neighborhood that God has placed me in.

My girls have handled all of this well, for the most part. Eva has been a little extra whiney and needy but other than that, she's a little trooper. Izzy, well nothing really seems to phase Izzy. She's a laid back chick and you really have to work hard to get her feathers ruffled. But when they do finally get ruffled...watch out! She's become quite the little hair puller.

But even amongst this very busy season in my life, I've tried hard to take time and enjoy the people around me.

One such person is Shelby. Shelby and her husband Alex have become a highlight to many of my days. I can be dead on my feet and ready to lock myself in the bathroom but when I see them out in the front yard, walking towards me to greet me with their sweet baby Olivia in tow, something in my heart lightens. I enjoy them.

Shelby and Alex grew their own tomatoes and onions this year in their front yard and the other night, Shelby showed up at my front door with a paper grocery bag full of them! Huge, red, sweet beefsteak tomatoes with a few crisp and tight onions thrown in. The first thing that came to mind...Marinara!

Here's my recipe for homemade marinara:

Ingredients:

7-8 large tomatoes, peeled and seeded (directions below)
2 small yellow onions, chopped
5-6 cloves of garlic, minced
2 tbsp of dried Oregano or Italian seasoning
2 tbsp of Extra Virgin Olive Oil
1/2 cup of red wine
Salt, Pepper and Roasted Red Pepper flakes to taste

Directions for Peeled and Seeded Tomatoes (if you already know how to do this, feel free to skip this part):

Bring a large pot of water to a rolling boil.

Prepare a large bowl of iced water.

Hole each tomato by taking a paring knife and running it around the top of the tomato around the stem at an angle.

Once all the tomatoes are holed, drop each one into the pot of boiling water using a slotted spoon (to minimize splashing).

Boil the tomatoes until the skin begins to wrinkle and peel away from the top (about 15-20 seconds)

Immediately drop into the iced water for another 15-20 seconds to stop the cooking process.

Pull the tomatoes out the gently peel the skin away from the flesh of the tomatoes. This should take very little effort.

Once all the tomatoes are peeled, you'll need to seed them. Do this by placing a strainer over a bowl and squeezing the tomatoes over the strainer. You won't be able to get every single seed, but the strainer should catch most of them. Make sure you're seeding them into a bowl as you will need the juice later.

Once all the tomatoes have been seeded, remove the strainer from the bowl and poor the juice back over the seeded tomatoes.

Now you have peeled and seeded tomatoes. You may proceed to making your Marinara :)

Marinara Directions:

Heat the olive oil in a large saucepan on medium heat.

Add the onions and saute them until golden brown

Next add, the garlic and oregano.

When the garlic begins to brown, add the red wine to deglaze the saucepan and use your wooden spoon to scrape up all the bits that have stuck to the bottom.

(I don't have pics of this part because well, I get a little silly whenever wine is involved ;p)

Then, add the peeled and seeded tomatoes along with their juice and give the whole concoction a nice stir.

Bring to a simmer and let it cook for about 2 hours.

Once it's cooked down a bit, add the salt, pepper and red pepper flakes to your liking. You can even add a little parmasean cheese if you'd like :)

Spring Visit

This past week, my sister-in-law, Anna came up for the day with her 3 beautiful kids! We had a blast decorating Easter cookies, blowing bubbles, drawing with sidewalk chalk and playing at the park.

It was a bittersweet visit as it was their last one before they move. Granted, they're not moving but a few more hours away, but it's been nice to have them a mere hour away for quick trips for the kids to see each other. I've loved having them live so close. I've loved watching the cousins enjoy one another. It's been a real blessing to have them near.

Emerald City Dreaming

Last week was my friend's daughter's 3rd birthday. Did I say that right? Sounded weird? Whatever...

Anyway, Becca (my friend) asked me to help her make a Wizard of Oz birthday cake as Eden (the birthday girl) is obsessed with all things Wizard of Oz. She's 3 and she'd take Dorothy over a Disney princess any day! It's refreshing actually. I really love that about little Eden.

Anyway, having never decorated an actual CAKE before (I tend to stick to smaller confections) I did my best to re-channel all of those Food Network challenges I've seen time and time again and Becca did some research online to find the perfect cake to replicate.

After about a week of research and pre-making about a million fondant poppy flowers, this was our end result...

And I have to admit, I had some help. Becca did the baking, my friend Michelle has an eye for placement so she came over to help us figure out where everything should go on the cake and well, I had the cutest little assistant when it came to making the fondant decorations...

I'm in Love

Paul came home Thursday evening with a smirk on his face. This always causes me concern. It usually means one of two things...he's spent money, or he's made plans and not informed me of them until I only have enough time to shower and scrunch some palmade through my hair.

He said something about being able to enjoy the "fruits of his labor," which made me roll my eyes and urge him to just get it over with and tell me what he did. He pulled out a computer mouse. One of those Magic Mac Mouses that he keeps talking about. I shrugged my shoulders, pretending to be unimpressed and said, "Oh, that's all?"

It wasn't. He insisted that I go out to the car and grab "the thing" he left in the back on accident. I looked at him like he was nuts. "You go get it," I retorted. The smirk came back. "You have to go get it, " he prodded.

I rolled my eyes again and made my way to the front door where I slipped my toes into my tennis shoes and didn't bother to slide my heels in after. It was raining...so I, of course, rolled my eyes yet again and made sure to push open the screen door with enough force to make an irritated scene.

I ran awkwardly to the van with my toes all curled up inside of my shoes trying to keep them from slipping off, and pulled open the back door with a bit of curiosity mixed with a lot of "this better be good."

And it was.

My birthday isn't for another week. But Paul and I really stink at waiting for the actual holiday to give one another our gifts.

This has been on my Christmas/birthday/anniversary/Valentine's Day list for a long time.

And now, it's mine.

So, I'm a Snob

I am. I'm sorry. I just realized that I showed you pictures of yummy oatmeal cookies a few days ago and didn't even bother to give you the recipe. I'm horrible, I know.

But here it is...

Simple Oatmeal Cookies:

1/2 lb butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
1-1/2 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups rolled oats
1 cup raisins (optional)
OR
1 cup chocolate chips (optional)

**Preheat oven to 350 degrees. Beat together butter and sugars until creamy. Add eggs and vanilla; beat well. Add combined flower, baking soda, cinnamon and salt; mix well. Stir in oats and raisins/chocolate chips; mix well. Drop by rounded tablespoonfuls onto un-greased cookie sheet. Bake 10-12 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack.

Makes about 4 dozen.**

It Starts

I love the holidays. I love the warmth of cozy sweaters and old movies with a cup of hot cocoa in hand. I love decorating and the smell of cinnamon and all spice in every kitchen. I love the crisp breeze in the evening and the aroma of fireplaces burning in the distance. I love holiday baking...

I also despise holiday baking.

I love to bake. I do. It's fun and it makes me feel all Suzie-Homemaker-ish. And there really is no better time to bake then when the air starts turning cool outside.

I also need to lose ___ lbs. Yes, I'm still working on it. Let's just say that starting a cupcake business in the middle of weight loss endeavors has proven to be a conflict of interest. Shocker...right?

But I can't help it. I love to bake. It's a way of making memories with Eva (and teaching her shapes, math, texture, colors, etc.) She loves to help me bake and I love that she loves to help me bake.

So, last week, when I opened my pantry to a container of Quaker Oats that I had purchased to make the topping for a peach streusel I made when my dad was here, I figured the best way to use the rest of them all up was, of course, oatmeal cookies.

They were delicious. No nuts, no chocolate chips, no raisins. Just yummy brown sugar, rolled oats goodness!


I threw half of them away when I realized that I was having a hard time stopping at one...or four.

And then, my neighbor brought over this...


Pumpkin Bread. Pumpkin bread with walnuts, golden raisins and a maple glaze. Ugh.

I had two slices and then wrapped the rest in foil and hid it in the back of my freezer.

I'm doomed. I'm destined to carry an extra ___ lbs for the rest of eternity. How does a girl who loves to bake (and who loves baked goods) lose weight during the holidays?!?

Well, I do have some extra motivation these days. Remember that puppy I want so bad?!? If I can lose X number of lbs before Christmas, guess what will be under my tree on Christmas morning?!? Yep! If I want a puppy, I'm going to have to work for it. I'm going to have to resist the baked goods through the holiday season.

Cross your fingers and say your prayers, because I have a can of pumpkin pie filling in my pantry calling out to me as I type.

Blueberry Pancakes

Sometimes, I like breakfast for dinner. Sometimes, the smell of shallots and garlic in the skillet just doesn't appeal to me and I want something wholesome and sweet. The girls don't usually mind when I lean in this direction. I think Eva would eat pancakes and waffles all day every day if I let her.

But this particular night, it was whole wheat pancakes with blueberries...yum!

Eva gobbled hers up before I could even grab the camera, but Izzy savored hers.

Yay for blueberry pancakes!


I think she even purposely left some around her mouth for later :)

Commissary Find

I found these gorgeous Macintosh apples at the commissary today.


We're usually a Fuji family, but man, I saw these shiny babes and the Fuji apples were a distant thought.

I smell an Apple Crostada coming on.
