Asian Turkey Lettuce Wraps


This is a super easy recipe that is super yummy!



1lb ground turkey
2 cloves garlic, minced
1 shallot
1 squash, shredded (I use the small side of my box grater)
1 zucchini, shredded
1 carrot, shredded
1/4 chopped scallion
salt and pepper
3 tbsp sesame oil
3 tbsp soy sauce
3 tbsp rice vineger
2 tbsp lemon juice
Asian Seasoning Mix (I use Pampered Chef brand) to taste
a dash of roasted red pepper flakes

Brown the turkey in a skillet adding in all of the ingredients (except the scallions) until turkey is fully cooked. Spoon mixture into a large piece of iceberg or bibb lettuce, top with chopped scallions, fold closed and enjoy!

**Tip: wrap the shredded squash, zucchini and carrot in a dishtowel and squeeze over the sink. If you don't strain the water out of the vegetables, your turkey mixture will be too wet.**
